Delicious tasting pear butter
Ingredients: 2 quarts (approx 20 ripened pears) 4 c sugar or (sucanat op) 1 tsp grated orange rind 1/3 c orange juice 1/2 tsp ground nutmeg
Directions: Wash, quarter and core pears. In saucepan: Add pears and cook until soft. Add water only to prevent sticking. Press pulp through sieve or food mill. Measure out 2 quarts of pulp. Add sugar or sucanat, grated orange rind, orange juice, and ground nutmeg. Cook until thick approx. 12-15 minutes occasionally stirring.
When mixture is done pour into jars, seal and process 10 minutes in boiling water.
