Delicious Pear Pie

A perfectly tasty pear pie


Ingredients:
1/4 c or 1/2 stick butter unsalted
2-1/4 lbs ripened, soft pears (Bartlett) or any other pears
1 tsp grated lemon rind
1-1/2 T lemon juice
1/2 c sugar or (sucanat op)
2 T all purpose flour or (whole wheat pastry flour op)
1/8 tsp ground nutmeg
pinch of ground cloves


Pie Glaze (op)
1 egg yolk
1 T water


Directions:
Pie Crust:
In large bowl:
Sift flour and salt. With fingertips mix in butter. Mixture will look like fine bread crumbs. Add cold water to form stiff dough. Chill dough before rolling it out.


Pie Filling:
In heavy 1 quart saucepan melt butter over medium heat. Cook 2 to 3 minutes occasionally stirring until butter turns light brown. Do not let it burn. Pour butter in small bowl leaving dark residue in pan.

Take pears, peel and core and cut into 1/2 inch thick slices lengthwise.

In large bowl add:
Pears and toss with lemon rind and juice. Add sugar, flour, nutmeg and cloves. Gently stir mixture to coat pears.

Crust:
Divide pastry in half. Roll half out on lightly floured surface. Roll into 11 inch circle. Take 9 inch pie pan and place rolled out dough in pan. Place pear mixture into unbaked pie shell. Spoon brown butter over pears. Moisten edge of pastry with water. Roll out 2nd ball of dough and place on top of pear mixture. Seal pastry dough together by pinching sides. Slit top and bake in 450 degree oven 12 minutes. Reduce heat to 400 degrees and bake additional 40 minutes or until done.
