Pear Cake
Delicious tasting pear cake
Ingredients: 1-1/2 c boiling water 1 c rolled oats 1/2 c butter 1 c sugar or sucanat (op) 1 c brown sugar 3 eggs 1 tsp vanilla 1-1/2 c flour or (whole wheat pastry flour opt) 1/2 tsp nutmeg 1/2 tsp ginger 1/2 tsp cloves 1/2 c chopped nuts 2 c peeled, cored and finely chopped pears 1 tsp cinnamon 1 tsp baking soda 1/2 tsp salt
Directions: In bowl pour boiling water over oats let sit for 1/2 hour.
In bowl cream: Butter and sugar, add eggs and vanilla and mix.
In larger bowl: Toss pears with flour, mix in soda, salt, spices and nuts. Fold in oatmeal and egg mixture and mix until well blended. Pour mixture in buttered and slightly floured baking pan.
Bake 350 degrees 40-45 minutes or until done. Cool and serve with ice cream or whipped topping
