Pineapple and Pear Butter
Pineapple and Pear blended into a delicious butter
Ingredients: 3 lbs pears peeled 1 lemon grated and juiced 1-1/2 c crushed pineapple 1 box Sure Jell or Pen Jel 5 -1/2 c sugar or (sucanat op) 1 box paraffin squares, melted
Directions: In saucepan cook: Pears on low temperature until soft (approx 15 mins). Mash softened fruit and add pineapple, grated lemon, lemon juice and Sure Jell or Pen Jel. Bring mixture to a hard boil and add sugar or sucanat. Cook again to a hard boil and let cook approx 10 minutes. Mixture should not be runny. It should set up. Pour out small amount to test. Let cool to see its desired thickness. If ready, turn heat off and let cool 2 minutes. Skim off foam and pour mixture into jelly glasses. Cover top of Pear Butter with 1/4 inch paraffin. Canned pears may be used instead of fresh pears.
