Prickly Pear Butter
Tasty prickly pear butter
Ingredients: 1 lb unsalted butter 2 each prickly pear cactus fruit or 1/2 c fruit or berry of your choice (strawberries, raspberries, blackberries, etc) 1 chopped bunch of cilantro 1/2 c honey salt to taste
Directions: In mixing bowl let butter soften.
Peel and puree cactus fruit. Strain the juice through a fine strainer.
Add juice, cilantro, honey and salt to softened butter. Blend until smooth. Put in the refrigerator until it begins to stiffen.
Take a small sheet of wax paper or plastic wrap and spread some of mixture in a small strip. Roll paper or plastic like a cigarette and twist ends until tightly packaged. Freeze until hard and return to refrigerator to soften slightly for easy slicing.
