Quick and Easy Pear Cake
Easy and delicious tasting pear cake
Ingredients: 1-1/2 c vegetable oil (olive op) 2 c sugar or (sucanat op) 3 eggs 3 c flour (whole wheat pastry flour op) 3/4 tsp salt 1 tsp baking soda 1 tsp cinnamon 1 tsp vanilla 2 c canned pears in juice chopped 1 c chopped pecans
Directions: In bowl mix: Oil, sugar and eggs.
In separate bowl mix: Flour, salt, soda and cinnamon and add to egg mixture. Add vanilla and stir in chopped pears and pecans.
Butter and lightly flour a 10 inch bundt pan. Pour batter in pan. Batter will be thick. Bake 325 degrees 1 hour and 20 minutes or until done. Let cake cool in pan 25 minutes. Remove cake from pan and set on cake rack for additional cooling. Serve with ice cream or whipped topping (op).
