Vanilla Pear Butter
A tasty vanilla flavored pear butter
Ingredients: 3-1/2 lbs firm, ripened, peeled, cored and quartered Bartlett pears 1/2 c sugar or (sucanat op) 1/4 c lemon juice from 2 lemons 1 stick unsalted butter cut in 8 pieces 2-1/2 tsp vanilla
Directions: In large heavy Dutch oven add: Pears, sugar, lemon juice and bring to boil over med heat. Cook covered 20 minutes or until pears are mushy.
Drain pears over saucepan reserving juices. Bring juice to a boil. Cook over medium heat frequently stirring until it equals 1/4 cup. Do not let mixture burn.
Add pears to food processor and process until well blended. Pour into large bowl. Add hot reduced juice, and butter. Stir until melted. Add vanilla. Store butter in jars in refrigerator no more than 4 weeks.
